3 Medium sized pomfrets or cod fish                            

2 teaspoons white pepper powder

1 teaspoon Worcestershire sauce                                   

1 tablespoon vinegar

2 Tablespoons oil                                                           

Salt to taste


Clean the fish well, slit sideways and remove the insides. Wash well. Mix the pepper salt, Worcestershire sauce and vinegar together and apply this paste all over and inside the fish. Leave aside for 15 minutes. Grease a Baking tray and lay the marinated fish on it. Drizzle the oil all over the fish. Grill in a moderate oven for 15 minutes


  1. My mother used to stuff them with sauteed onion rings and tomatoes with turmeric, a few thin slices of green chilis, a little salt and red chili powder. The pomfrets tasted heavenly. Your recipe too seems great. I’ll have it tried out as soon as I am able to lay my hands on medium-sized pomfrets which, unfortunately, are very rarely seen in the fish market in Jaipur.

      No luck yet. We only get mackerels and over-priced kingfish here. Prawns are a rarity and pomfrets are never seen in the fish market here. However, I’ll keep trying.
